How the characters fit into Propp's theory:
Tristan Thorn - Hero
He's very humble and clumsy in the beginning, however by the middle of the film he is strong and courageous. He fits into the stereotypical 'look' of the hero by being tall and handsome (but at the beginning of the film he is scruffy and just a shop boy). He also isn't American like the usual hero's in films, which is probably down to the fact that the majority of the cast are British. He's just a normal guy at the beginning of the film. He's been born into a magical family.
Yvaine - Heroine / Princess / Helper
Looks wise, she fits into the princess role, due to her being very beautiful, and also for starting Tristan's adventure - she is Tristan's 'goal' to rescue/keep safe/marry.
Lamia - Villain
She fits into the role looks wise due to her being: old, ugly and female. She's very nasty and her voice is very twiney and witchy. She wants to kill the princess, and so she ends up fighting with the hero, as the hero wants to save and protect the princess.
Stars - Dispatcher
The stars alert Tristan that Yvaine is in danger while he naps by the tree.
Captain Shakespeare - Farther Figure / Donor / Helper
He looks out for Tristan and teaches him how to use a sword and stuff. He also protects him by changing his appearance so that the other pirates onboard the ship don't recognise him. He fits into the farther role as he looks out for Tristan. He fits into the donor role as he supplies Tristan with lightening and also sword skills.
Victoria Forester - False Hero / Dispatcher / Princess
She fits into this role, as at the beginning of the film she is the love interest, however because she is so nasty and vain, it makes her into a false hero as she doesn't deserve Tristan to be so nice to her. She sends Tristan off on his quest for the star.
Una (Tristan's Mother) - Helper - Donor
At the end of the film, she helps Tristan to fight against the witches. She also provided Tristan's farther with the snowdrop lucky charm which helped to protect him.
Dunstan Thorn (Tristan's Farther) - Helper / Farther Figure
He gave Tristan the babylon candle and the snowdrop charm which aided him massively on his quest.
Applying Toderov's Theory to Stardust:

Destruction:
Yvaine gets knocked out of the sky and lands in Stormhold. The king dies.
Recognition of Destruction:
When the stars alert Tristan of the danger that Yvaine is in.
Attempts to Repair:
When Tristan and Yvaine try to get home back to Stormhold/ the stars.
Reinstatement of Equilibrium:
Tristan has eternal love, he's become a 'man' and is now king, Victoria get's her comeuppance.
